1 cup red lentils, rinsed

1 can (13.5 oz) coconut milk

1 cup vegetable broth

1 medium onion, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon red curry paste

1 teaspoon turmeric powder

1 teaspoon ground cumin

1 teaspoon coriander powder

1 medium carrot, diced

1 red bell pepper, diced

2 cups spinach, fresh or frozen

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.

    Add the minced garlic and grated ginger to the pot, stirring frequently until fragrant, about 1 minute.

      Stir in the red curry paste, turmeric, cumin, and coriander, allowing the spices to toast for 1-2 minutes.

        Add the diced carrot and red bell pepper to the pot, cooking for another 3-4 minutes until they begin to soften.

          Pour in the vegetable broth and coconut milk, followed by the rinsed lentils. Stir well to combine all the ingredients.

            Bring the mixture to a gentle boil, then reduce heat to low and let it simmer for about 25 minutes, or until the lentils are fully cooked and soft.

              If using fresh spinach, stir in at this point and let it wilt for 2-3 minutes. If using frozen, allow it to heat through.

                Adjust seasoning with salt and pepper to taste. For a creamier texture, use an immersion blender to blend a portion of the soup, leaving some lentils whole for texture.

                  Serve hot, garnished with fresh cilantro and lime wedges on the side for squeezing over the soup.
