Creamy Garlic Butter Steak Bites with Mashed Potatoes

1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (optional)

Salt and pepper to taste

1 lb potatoes, peeled and chopped

½ cup heavy cream

3 tablespoons cream cheese, softened

2 tablespoons chopped fresh parsley (for garnish)

Prepare the Potatoes: In a large pot, add the chopped potatoes and cover them with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return the potatoes to the pot.

    Make the Mashed Potatoes: Add the heavy cream and softened cream cheese to the drained potatoes. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste. Keep warm on low heat while you prepare the steak bites.

      Sear the Steak: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once melted and sizzling, add the steak bites in a single layer. Season with salt and pepper. Sear for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove the steak bites from the pan and set aside.

        Create the Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and fresh thyme (if using). Sauté for about 30 seconds until fragrant.

          Combine: Add the steak bites back to the skillet with the garlic butter. Toss to coat the steak in the sauce and heat for another minute.
