Ingredients

4 salmon fillets

2 cups button mushrooms, sliced

4 cloves garlic, minced

1/2 cup heavy cream

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Heat the olive oil in a large skillet over medium heat. Once hot, add the sliced mushrooms and cook for about 4-5 minutes or until they become golden brown and tender.

Add the minced garlic to the skillet with the mushrooms and sauté for an additional 1–2 minutes until the garlic is fragrant but not burned.

Push the mushrooms and garlic to one side of the skillet. Season the salmon fillets with salt, pepper, and thyme. Place the salmon in the skillet, skin-side down if applicable. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Once the salmon is cooked, pour in the heavy cream and lemon juice, stirring to combine it with the mushrooms and garlic. Let it simmer for 2-3 minutes until the sauce thickens slightly.

Taste and adjust seasoning if necessary. If you prefer a bit more zing, add a little more lemon juice or fresh herbs.

Serve the salmon topped with the creamy mushroom sauce and garnish with freshly chopped parsley.
