Instructions
Cook the gnocchi according to the package instructions. Once they rise to the surface of the boiling water, allow them to cook for an additional 2 minutes. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour in the heavy cream, stirring to combine, and let it simmer for a few minutes until slightly thickened.
Stir in the crumbled feta cheese and nutmeg, mixing until the cheese melts and incorporates into the sauce.
Season with salt and pepper to taste.
Add the cooked gnocchi to the creamy sauce and gently toss to coat all the pieces. Allow it to heat through for an additional 2 minutes.
If desired, sprinkle grated Parmesan cheese on top for extra flavor.
Notes
Serve in shallow bowls, garnished with fresh basil leaves and an extra sprinkle of feta cheese for a pop of color.
