3 large potatoes, peeled and cubed

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs

2 eggs, beaten

Oil for frying (or cooking spray for baking)

Instructions
 

Begin by boiling the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    In a large mixing bowl, mash the cooked potatoes until smooth.

      Add the cream cheese, sour cream, shredded cheddar cheese, garlic powder, onion powder, and chopped green onions to the mashed potatoes. Mix well until creamy and fully combined.

        Season the mixture with salt and pepper to taste. Set aside to cool completely—this will make it easier to shape into puffs.

          Once the potato mixture is cool, use your hands to form small balls (about 1 inch in diameter). Flatten each ball slightly to create a puff shape.

            Set up a breading station: place the beaten eggs in one bowl and the breadcrumbs in another. Dip each potato puff first into the egg, then roll it in breadcrumbs until fully coated.

              In a large skillet, heat oil over medium heat (or preheat your oven to 400°F if baking). If frying, cook the puffs in batches until golden brown on all sides, about 3-5 minutes. For baking, place the puffs on a lined baking sheet and spray lightly with cooking spray, baking for 15-20 minutes, turning halfway through, until golden.

                Remove the puffs from the oil or oven and place them on paper towels to drain any excess oil.

                  Serve warm, garnished with extra green onions or cheddar cheese, if desired.
