2 tablespoons olive oil

4 cloves garlic, minced

6 cups fresh spinach (or 1 cup frozen spinach)

1 cup heavy cream or coconut cream for a dairy-free option

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan alternative)

1 teaspoon lemon zest

1/2 teaspoon nutmeg

Salt and pepper to taste

Crushed red pepper flakes (optional, for a spicy kick)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the pasta and set aside.

    Sauté Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant but not browned.

      Add Spinach: If using fresh spinach, add it to the pot and cook for 3-4 minutes, stirring frequently, until wilted. For frozen spinach, add it directly and stir until heated through.

        Make the Cream Sauce: Pour in the heavy cream and stir well to combine with the spinach and garlic. Add the grated Parmesan cheese, lemon zest, nutmeg, salt, and pepper. Stir continuously until the cheese is melted and the sauce is creamy.

          Combine with Pasta: Add the drained pasta to the pot, tossing it with the creamy spinach sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Adjust Seasoning: Taste the pasta and adjust the seasoning with more salt, pepper, or red pepper flakes if desired.

              Serve: Divide the creamy spinach and garlic pasta into bowls and garnish with fresh basil leaves.
