Instructions
Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the chopped sun-dried tomatoes and Italian seasoning, cooking for an additional 2 minutes to combine the flavors.
Pour in the heavy cream and bring to a gentle simmer. Allow it to thicken slightly, which should take about 3-4 minutes.
Stir in the grated Parmesan cheese until it melts and the sauce is creamy. Season with salt and pepper to taste.
Add the cooked tortellini to the skillet, gently tossing to coat them in the creamy sauce. Cook for another 2 minutes to heat through.
Remove from heat and garnish with fresh basil before serving.
