12 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 tablespoon tomato paste

1 teaspoon red pepper flakes (adjust to taste)

1 cup fresh basil leaves, chopped

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions
 

Start by cooking the penne pasta in a large pot of salted boiling water according to the package instructions until al dente. Once cooked, drain and set aside, reserving 1 cup of pasta water.

    In another large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.

      Pour in the crushed tomatoes and add the tomato paste. Stir well, allowing the mixture to simmer for about 5 minutes.

        Lower the heat and slowly add the heavy cream while stirring. Return the sauce to a gentle simmer.

          Add the red pepper flakes, sugar, salt, and pepper. Adjust seasoning as necessary. Let the sauce simmer for another 5-7 minutes until it thickens slightly.

            Stir in the chopped basil and mix to incorporate the flavors.

              Combine the cooked penne pasta with the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

                Serve hot, garnished with grated Parmesan cheese and extra basil if desired.
