1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 (8 oz) packages cream cheese, softened

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1 cup heavy cream

Pinch of salt

¼ cup granulated sugar (for topping)

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are well coated. Press this mixture evenly into the bottom of the prepared baking dish. Bake for 10 minutes, then remove and let cool.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

        Add Sugar and Eggs: Gradually add 1 cup of sugar, mixing until combined. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, heavy cream, and a pinch of salt until everything is well incorporated and the mixture is smooth.

          Combine and Bake: Pour the cheesecake mixture over the cooled crust, spreading it evenly. Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center still has a slight jiggle.

            Cool Down: Turn off the oven, crack the door open slightly, and allow the cheesecake to cool in the oven for about 1 hour. This helps prevent cracking.

              Chill: Remove the cheesecake from the oven and let it cool to room temperature before transferring it to the refrigerator. Chill for at least 4 hours, or preferably overnight, to let the flavors meld.

                Brûlée the Top: Once chilled, sprinkle the ¼ cup of granulated sugar evenly over the top of the cheesecake layer. Use a kitchen torch to caramelize the sugar until it's golden and bubbly. If you don’t have a torch, you can place the bars under the broiler for 1-2 minutes—watch closely to avoid burning!

                  Slice and Serve: Allow the sugar topping to harden for a few minutes before slicing the cheesecake bars into squares. Use a sharp knife dipped in hot water for cleaner cuts.
