2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup whole milk

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup heavy cream

2 tablespoons vanilla bean paste (or 1 vanilla bean, split)

1/4 cup granulated sugar for topping

Optional: fruit for garnishing (strawberries or raspberries)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

      In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; the batter should be slightly lumpy.

          Fill each donut mold about two-thirds full with batter.

            Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

              While the donuts are cooling, prepare the crème brûlée filling. In a saucepan over medium heat, combine the heavy cream and vanilla bean paste. Heat until just simmering, then remove from heat and allow to cool slightly.

                In a separate bowl, whisk together the egg yolks and 2 tablespoons of sugar until the mixture becomes pale and slightly thickened.

                  Slowly pour the warm cream mixture into the egg yolks while continuously whisking to prevent curdling.

                    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil. Remove from heat and let it cool completely.

                      Once the donuts and crème brûlée filling are cool, use a piping bag or a small knife to create a hole in each donut and fill it with the crème brûlée filling.

                        Sprinkle a thin layer of granulated sugar on top of each filled donut.

                          Use a kitchen torch to carefully melt the sugar until it becomes caramelized and bubbly. If you don’t have a kitchen torch, you can place the donuts under a broiler for a few minutes, watching them closely to prevent burning.

                            Once the sugar has cooled and hardened, your donuts are ready to serve!
