Instructions
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
In a shallow bowl, combine the flour, garlic powder, paprika, salt, and pepper. Mix well.
In a separate bowl, beat the two eggs until well combined.
In another bowl, mix the shredded coconut and panko breadcrumbs until evenly blended.
Take each shrimp and first coat it in the flour mixture, shaking off any excess.
Dip the floured shrimp into the beaten eggs, ensuring they are fully coated.
Finally, roll the shrimp in the coconut-panko mixture, pressing gently to adhere the coating.
Once all shrimp are coated, lightly spray them with cooking spray for an extra crunch.
Place the shrimp in a single layer in the air fryer basket, leaving space between each piece.
Air fry the shrimp at 400°F (200°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Repeat the process for any leftover shrimp, adjusting cooking time as necessary.
Notes
Serve with a tangy dipping sauce like sweet chili sauce or mango salsa. Garnish with lime wedges and fresh cilantro.
