1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup buttermilk

Oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tbsp lime juice

1 tsp honey

1 green onion, finely chopped (for garnish)

In a large bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

    In another bowl, pour the buttermilk. Dip chicken pieces into buttermilk, letting excess drip off before dredging in the flour mixture. Make sure the chicken is well-coated.

      Heat oil in a deep skillet or frying pan over medium-high heat. You'll need about 1 inch of oil for frying.

        Fry the coated chicken pieces in batches, ensuring not to overcrowd the pan. Cook for 5-7 minutes until golden brown and crispy, turning occasionally for even cooking. Transfer to a paper towel-lined plate to drain excess oil.

          While the chicken is frying, mix together all the Bang Bang Sauce ingredients—mayonnaise, sweet chili sauce, sriracha, lime juice, and honey—in a bowl until smooth and well combined. Adjust the spice level to your preference.

            Once all the chicken is cooked, toss it in the Bang Bang Sauce until evenly coated.
