1 lb salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

Chopped green onions for garnish

Prep the Salmon: Pat the salmon cubes dry with paper towels. This helps achieve a crispier texture when frying.

    Breading Station: Set up a breading station with three shallow bowls. In the first bowl, place the flour mixed with garlic powder, onion powder, smoked paprika, salt, and pepper. In the second bowl, beat the eggs. In the third bowl, add the panko breadcrumbs.

      Breading Process: Dip each salmon cube first in the flour mixture, ensuring it's well-coated, then into the egg, and finally roll it in the panko breadcrumbs until fully coated. Set aside on a plate or baking sheet.

        Heat Oil: In a large skillet, add about ½ inch of oil and heat over medium-high heat until shimmering (around 350°F or 175°C).

          Fry the Salmon: Carefully add the breaded salmon bites to the skillet in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

            Prepare Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha. Adjust the amount of sriracha based on your desired level of spiciness.

              Serve: Place the crispy salmon bites on a serving platter and drizzle or dip with the Bang Bang sauce. Garnish with chopped green onions.
