4 large russet potatoes

1 cup shredded cheddar cheese

1 cup cooked ground beef (seasoned with salt, pepper, and onion)

2 tablespoons sour cream

1/4 cup milk

1/2 teaspoon garlic powder

1/4 teaspoon paprika

1 cup breadcrumbs

2 large eggs, beaten

Salt and pepper to taste

Vegetable oil for frying

Fresh chives for garnish (optional)

Prepare the Potatoes: Peel and chop the russet potatoes into even cubes. Boil them in salted water for about 15-20 minutes or until fork-tender.

    Mash the Potatoes: Drain the boiled potatoes, then return them to the pot. Add sour cream, milk, garlic powder, salt, and pepper. Mash until smooth and creamy; let cool slightly.

      Prepare the Filling: In a bowl, mix the cooked ground beef with cheddar cheese. Adjust seasoning with salt and pepper; set aside.

        Form the Potato Balls: Take a generous scoop of the mashed potato mixture and flatten it in your palm. Place about a tablespoon of the beef and cheese filling in the center, then carefully mold the mashed potatoes around the filling, forming a ball. Repeat until all the mixture is used.

          Coat the Potato Balls: Dip each ball in the beaten eggs, letting the excess drip off. Roll them in breadcrumbs until fully coated.

            Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until hot (around 350°F or 175°C).

              Fry the Potato Balls: Carefully place a few potato balls in the hot oil (don’t overcrowd). Fry for 4-5 minutes or until golden and crispy on all sides. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.

                Serve: Arrange the crispy stuffed potatoes on a serving platter. Garnish with chopped chives if desired.
