2 cups mashed potatoes (preferably leftover)

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon dried parsley

1 large egg, beaten

1 cup breadcrumbs (Italian seasoned preferred)

Salt and pepper to taste

Oil for frying

In a large bowl, combine the mashed potatoes, grated Parmesan cheese, minced garlic, garlic powder, onion powder, and dried parsley. Mix well until all ingredients are evenly incorporated.

    Season the mixture with salt and pepper to taste.

      Add the beaten egg to the potato mixture, and combine until fully integrated.

        Use your hands to shape the mixture into small balls, about 1 inch in diameter.

          Roll each ball in breadcrumbs until fully coated.

            Heat oil in a deep skillet or fryer over medium heat until hot. To test, drop a breadcrumb into the oil; it should sizzle.

              Carefully add the potato balls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy on all sides.

                Use a slotted spoon to remove the crispy potato balls from the oil, and place them on a paper towel-lined plate to drain excess oil.

                  Repeat the frying process with the remaining potato balls.
