1 pound ground beef or Italian sausage

1 medium onion, finely chopped

4 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups beef or vegetable broth

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

In a skillet over medium heat, cook the ground beef or sausage until browned. Drain excess fat and transfer to the crock pot.

    Add the chopped onion and garlic to the crock pot, stirring to combine with the meat.

      Pour in the crushed tomatoes, broth, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir well to combine all the ingredients.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours.

          About 30 minutes before serving, add the broken lasagna noodles to the soup. Stir to ensure they are submerged and cover again.

            In a separate bowl, mix the ricotta cheese and half of the mozzarella cheese together until creamy.

              Once the noodles are tender, stir in the ricotta mixture until well combined.

                Top with the remaining mozzarella and the Parmesan cheese. Cover and let it melt for about 10 minutes.

                  Serve hot, garnished with fresh basil leaves.
