3 lbs beef short ribs, bone-in

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup beef broth

1 tablespoon tomato paste

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, for garnish

Sear the Ribs: In a large skillet, heat olive oil over medium-high heat. Season the short ribs generously with salt and pepper. Sear the ribs on all sides until browned, about 4-5 minutes per side. Remove the ribs and place them in the crockpot.

    Sauté the Vegetables: In the same skillet, add chopped onion, minced garlic, diced carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

      Add the Sauces: Stir in the beef broth, tomato paste, soy sauce, Worcestershire sauce, thyme, and rosemary. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet for added flavor.

        Combine in the Crockpot: Pour the vegetable and sauce mixture over the short ribs in the crockpot, ensuring the ribs are well-covered by the liquid and vegetables.

          Cook: Cover the crockpot and cook on low for 8 hours or on high for 4 hours until the meat is very tender and falling off the bone.

            Finish and Serve: Once cooked, carefully remove the short ribs from the crockpot and transfer them to a serving platter. Strain the sauce, discarding the solids if desired, and ladle the sauce over the ribs. Garnish with fresh parsley.
