3 pounds beef chuck roast

1 packet Italian seasoning mix

1 cup beef broth

1 jar (16 oz) pepperoncini peppers, undrained

1 onion, sliced

3 cloves garlic, minced

1 tablespoon Worcestershire sauce

Salt and pepper to taste

8 hoagie rolls

Provolone cheese slices (optional)

Fresh basil leaves for garnish (optional)

Prep the Beef: Start by trimming excess fat from the beef chuck roast. Season each side generously with salt and pepper.

    Sear the Roast: In a large skillet over medium-high heat, quickly sear the roast for about 3-4 minutes on each side until browned. This step is optional but adds flavor.

      Combine Ingredients: In the crockpot, add the sliced onion, minced garlic, and the beef broth. Place the seared roast on top of the vegetables.

        Add Seasonings: Sprinkle the Italian seasoning mix evenly over the roast, followed by the Worcestershire sauce and the entire jar of pepperoncini peppers (including the juice).

          Cook: Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and easily shreds with a fork.

            Shred the Beef: Once cooked, remove the roast from the crockpot and shred it using two forks. Return the shredded beef back into the crockpot, mixing it with the juices.

              Toast the Rolls: If desired, preheat the oven to 350°F (175°C) and place the hoagie rolls on a baking sheet. Toast them for about 5-7 minutes until slightly crispy.

                Assemble the Sandwiches: For each sandwich, fill the toasted hoagie roll with generous amounts of the shredded beef mixture and top with a slice of provolone cheese.

                  Serve: If you used provolone, you can pop the sandwiches back in the oven for 2-3 minutes to melt the cheese. Garnish with fresh basil leaves.
