4 large carrots, peeled and julienned

1 cup red cabbage, finely shredded

1/2 cup fresh cilantro, chopped

1/4 cup sunflower seeds, toasted

1/4 cup raisins or dried cranberries

1/4 cup feta cheese, crumbled (optional)

2 tablespoons sesame oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Instructions
 

Start by preparing the carrots. Peel them and then julienne them to get that crunchy texture.

    In a large mixing bowl, combine the julienned carrots, shredded red cabbage, and chopped cilantro.

      Add the toasted sunflower seeds and raisins (or dried cranberries) to the bowl for added texture and sweetness.

        In a small separate bowl, whisk together the sesame oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until well combined.

          Pour the dressing over the vegetable mixture and toss gently to coat all the ingredients evenly.
