2 lbs pork shoulder, cut into large chunks

1 cup fresh orange juice

1/2 cup fresh lime juice

8 cloves garlic, minced

1 tablespoon fresh oregano, chopped

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt

1/4 teaspoon cayenne pepper (optional for heat)

1/2 cup olive oil

1/4 cup fresh cilantro, chopped (for garnish)

Limes and orange slices (for serving)

Instructions
 

Prepare the Marinade: In a large bowl, whisk together the orange juice, lime juice, minced garlic, oregano, cumin, smoked paprika, black pepper, salt, and cayenne pepper (if using).

    Marinate the Pork: Place the pork shoulder chunks into a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it's well-coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 300°F (150°C).

        Sear the Pork: In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear the pork chunks on all sides until browned, about 5-7 minutes.

          Add Marinade: Once browned, pour the reserved marinade over the seared pork. Bring the liquid to a simmer, then cover the skillet or pot with a lid or aluminum foil.

            Slow Roast: Transfer the skillet or pot to the preheated oven and cook for 3 to 4 hours, or until the pork is fork-tender and easily shreds with a fork.

              Shred the Pork: After roasting, remove the pork from the oven. Use two forks to shred the meat directly in the skillet, mixing it with the juices.
