2 cups dried cannellini beans, soaked overnight

4 cups vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 medium carrots, chopped

2 celery stalks, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon lime juice

Fresh cilantro for garnish

Drain and rinse the soaked beans. In a large pot, add the beans and vegetable broth. Bring to a boil, then lower heat and simmer, partially covered, for about 1 hour or until the beans are tender.

    In a separate skillet, heat olive oil over medium heat. Add the chopped onion, garlic, red bell pepper, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

      Stir in the ground cumin, smoked paprika, and bay leaf. Cook for an additional 2 minutes to release the spices' aromas.

        Add the sautéed vegetable mixture to the pot with the beans and broth. Stir to combine. Continue to simmer for another 30 minutes to meld the flavors.

          Remove from heat, discard the bay leaf, and season the soup with salt, pepper, and lime juice to taste.

            For a creamier texture, use an immersion blender to puree a portion of the soup or mash some beans against the side of the pot with a fork.

              Serve the soup hot, garnished with fresh cilantro.
