1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small corn tortillas

1 cup shredded red cabbage

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Instructions
 

Preheat your oven to 400°F (200°C).

    Pat the chickpeas dry with a paper towel and place them in a large bowl.

      Drizzle the olive oil over the chickpeas and sprinkle with smoked paprika, cumin, garlic powder, salt, and black pepper. Toss until the chickpeas are evenly coated.

        Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until crispy, shaking the pan halfway through.

          While the chickpeas are baking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

            To assemble the tacos, place a generous amount of crispy chickpeas on each tortilla, followed by a handful of shredded red cabbage and slices of avocado.

              Garnish with chopped cilantro and serve with lime wedges on the side for squeezing over the tacos.
