1 1/4 cups all-purpose flour

1/3 cup powdered sugar

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 large egg yolk

2 tablespoons cold water

8 oz dark chocolate (70% cocoa), chopped

1 cup heavy cream

3 tablespoons granulated sugar

1 teaspoon vanilla extract

Sea salt, for garnish

Fresh berries (like raspberries or strawberries) for serving

Make the Tart Crust: In a food processor, combine the flour, powdered sugar, and salt. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.

    Add the egg yolk and cold water, and pulse just until the dough comes together.

      Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

        Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the chilled dough into a circle about 1/8 inch thick.

          Carefully place the dough into a 9-inch tart pan, pressing it into the edges and trimming any excess. Prick the bottom with a fork to prevent bubbling.

            Blind Bake: Place a sheet of parchment paper over the crust, fill it with pie weights or dried beans, and bake for 15 minutes. Remove the weights and parchment, and bake for an additional 10 minutes until golden brown. Let it cool completely.

              Prepare the Chocolate Filling: In a medium saucepan over low heat, combine the chopped dark chocolate and heavy cream. Stir constantly until the chocolate is melted and smooth.

                Stir in the granulated sugar and vanilla extract until well combined. Remove from heat and allow to cool slightly.

                  Pour the chocolate mixture into the cooled tart shell, smoothing out the top with a spatula.

                    Refrigerate the tart for at least 2 hours to set.
