Ingredients

1 lb ground chicken

1 tablespoon Cajun seasoning

1 small onion, finely chopped

1 bell pepper, finely chopped (red or green)

2 cloves garlic, minced

1 can (8 oz) tomato sauce

1 tablespoon Worcestershire sauce

2 teaspoons brown sugar

1 tablespoon Dijon mustard

Salt and black pepper to taste

4 hamburger buns

1 cup shredded lettuce

1/2 cup diced tomatoes

1/2 cup pepper jack cheese, shredded

Instructions

In a large skillet over medium heat, add the ground chicken and cook until browned, breaking it up with a spoon, about 5-7 minutes.

Add the chopped onion and bell pepper to the skillet, cooking until softened, around 4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Sprinkle in the Cajun seasoning, stirring to coat the chicken mixture evenly.

Pour in the tomato sauce, Worcestershire sauce, brown sugar, and Dijon mustard. Stir to combine and let it simmer for about 10 minutes, allowing the flavors to meld together. Add salt and pepper to taste.

In the meantime, toast the hamburger buns lightly on a skillet or toaster.

Once the chicken mixture has thickened slightly, remove it from heat.

Assemble the Sloppy Joes by spooning the Cajun chicken mixture onto the bottom half of each toasted bun.

Top with shredded lettuce, diced tomatoes, and a sprinkle of pepper jack cheese. Cap with the top half of the bun.
