4 slices of rustic ciabatta or sourdough bread

8 ounces fresh mozzarella cheese, sliced

2 large ripe tomatoes, sliced

1 cup fresh basil leaves

2 tablespoons pesto (homemade or store-bought)

2 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Preheat your panini press or a skillet over medium heat if you don't have a press.

    Drizzle olive oil on one side of each slice of bread to ensure it toasts beautifully.

      On the non-oiled side of two slices, spread a layer of pesto evenly.

        Layer the fresh mozzarella slices on top of the pesto, followed by the tomato slices.

          Sprinkle a pinch of salt and pepper over the tomatoes and add fresh basil leaves generously.

            Drizzle a small amount of balsamic glaze over the basil, enhancing the flavor.

              Place the remaining slices of bread on top, oiled side out, forming a sandwich.

                If using a panini press, grill the sandwiches for about 3-5 minutes until golden brown and the cheese is melted.

                  - If using a skillet, place the sandwiches in the skillet and press down with a spatula or a heavy pan. Grill for 2-3 minutes on each side, until crisp and golden.
