1 ½ pounds ground beef

1 cup finely chopped yellow onions

1 cup finely chopped mushrooms

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon Worcestershire sauce

1 cup breadcrumbs

1 large egg

1 cup shredded Gruyère cheese

½ cup beef broth

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat your oven to 350°F (175°C) and prepare a baking dish by lightly greasing it with non-stick spray or olive oil.

    Sauté the aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onions and mushrooms, cooking until they are soft and slightly caramelized, about 8-10 minutes. Stir in minced garlic and thyme, cooking for an additional minute. Remove from heat and allow to cool slightly.

      Mix the meatloaf: In a large bowl, combine the ground beef, sautéed onion and mushroom mixture, Worcestershire sauce, breadcrumbs, egg, beef broth, salt, and pepper. Mix thoroughly until all ingredients are well combined.

        Incorporate the cheese: Gently fold in half of the shredded Gruyère cheese into the meat mixture, ensuring it's evenly distributed.

          Shape and bake: Transfer the meat mixture into the prepared baking dish, shaping it into a loaf form. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C).

            Add the cheesy topping: In the last 10 minutes of baking, sprinkle the remaining Gruyère cheese evenly over the top of the meatloaf, allowing it to melt into a golden and bubbly layer.

              Rest and serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This will help the juices redistribute and enhance flavor.
