4 large russet potatoes

1 cup sour cream

1 cup shredded cheddar cheese

½ cup cream cheese, softened

½ cup cooked crispy bacon, chopped

¼ cup green onions, finely sliced

2 tablespoons unsweetened cocoa powder

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ cup mini marshmallows (for topping)

¼ cup chocolate syrup (for drizzling)

Bake the Potatoes: Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes, then poke several holes in each potato with a fork. Place them directly on the oven rack and bake for 45-60 minutes, until they are tender when pierced with a fork.

    Prepare the Filling: While the potatoes are baking, in a mixing bowl, combine the sour cream, cream cheese, shredded cheddar cheese, cocoa powder, garlic powder, onion powder, and a pinch of salt and pepper. Stir until well blended. Add half of the crispy bacon and green onions, mixing until evenly distributed.

      Cool and Scoop: Once the potatoes are done baking, remove them from the oven and let them cool slightly. Slice each potato down the center and gently scoop out most of the flesh, leaving a little around the edges to maintain structure.

        Mix in Potato Flesh: Add the scooped potato flesh to the filling mixture and stir until it’s smooth and creamy. Adjust seasoning if needed.

          Fill the Potatoes: Carefully spoon the filling back into the emptied potato skins, dividing it evenly among them.
