8 rice paper wrappers

1 cup cooked salmon, flaked

1 cup vermicelli noodles, cooked

1 cup mixed greens (romaine, spinach, and arugula)

1/2 cup carrots, julienned

1/2 cup cucumber, julienned

1/4 cup fresh mint leaves

1/4 cup cilantro leaves

1 tablespoon soy sauce (low-sodium)

1 tablespoon sesame oil

1 teaspoon lime juice

Salt and pepper to taste

Olive oil spray for baking

Prepare the Filling: In a large mixing bowl, combine the flaked salmon, cooked vermicelli noodles, mixed greens, carrots, cucumber, mint, and cilantro. Drizzle with soy sauce, sesame oil, and lime juice. Season with salt and pepper to taste. Gently toss until well combined.

    Soften the Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Lay it flat on a clean surface.

      Assemble the Spring Rolls: On the lower third of the wrapper, place a generous amount of the salmon filling. Fold the sides in and then roll from the bottom up to the top, keeping the filling snug. Repeat this process for the remaining wrappers and filling.

        Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

          Bake the Spring Rolls: Place the assembled spring rolls on the prepared baking sheet. Lightly spray each roll with olive oil to help them crisp up during baking. Bake in the preheated oven for 12-15 minutes, or until golden brown and crisp.
