Ingredients
  

2 pounds russet potatoes, peeled and chopped

1 cup green cabbage, finely shredded

1/2 cup scallions, chopped (white and green parts)

1/2 cup heavy cream

4 tablespoons unsalted butter

Salt and pepper to taste

1/4 teaspoon nutmeg (optional)

Fresh parsley for garnish

Instructions
 

In a large pot, bring salted water to a boil and add the chopped potatoes. Cook for about 15-20 minutes or until fork-tender.

    While the potatoes are cooking, in a separate pan, melt 2 tablespoons of butter over medium heat. Add the shredded cabbage and half of the scallions. Sauté until the cabbage is tender, about 5-7 minutes.

      Once the potatoes are done, drain them and return them to the pot. Add the heavy cream, remaining butter, sautéed cabbage and scallion mixture, salt, pepper, and nutmeg (if using).

        Mash everything together until creamy and well combined, adjusting seasoning to taste.

          To serve, spoon the colcannon mash onto plates and create a well in the center. Add a small pat of butter to melt into the well, and garnish with fresh parsley and remaining scallions.
