1 lb (450g) pork sausages

1 lb (450g) bacon, cut into pieces

4 large potatoes, peeled and sliced

2 large onions, sliced

3 cups chicken broth

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon black pepper

1 bay leaf

Fresh parsley for garnish

Salt to taste

Instructions
 

In a large pot or Dutch oven, preheat over medium heat and add the sliced bacon. Cook until the bacon starts to crisp, about 5 minutes.

    Add the sausages to the pot and brown them on all sides. Remove both the bacon and sausages from the pot and set aside.

      In the same pot, add the sliced onions and garlic, cooking until the onions are translucent, about 4 minutes.

        Layer the sliced potatoes over the onions, then return the bacon and sausages to the pot.

          Pour in the chicken broth and sprinkle thyme, black pepper, and add the bay leaf. Stir gently to combine.

            Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1 hour, until the potatoes are tender and the flavors are well combined.

              Taste and adjust seasoning with salt if needed.

                Remove the bay leaf before serving.
