1 pound of pork sausages (breakfast sausage or Italian sausage)

2 pounds of Yukon Gold potatoes, peeled and chopped

1/2 cup milk

1/4 cup unsalted butter

Salt and pepper to taste

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon Dijon mustard

1/4 cup chopped green onions (for garnish)

Gravy (store-bought or homemade, optional)

Instructions
 

Begin by cooking the sausages. In a large skillet over medium heat, add the sausages and cook until browned and cooked through, about 15-18 minutes, turning occasionally. Remove from the skillet and set aside.

    While the sausages are cooking, prepare the mashed potatoes. In a large pot, bring water to a boil, then add the chopped Yukon Gold potatoes. Boil until fork-tender, about 15-20 minutes.

      Drain the potatoes and return them to the pot. Add the milk, butter, garlic powder, onion powder, salt, and pepper. Mash until smooth and creamy. Adjust seasonings to taste.

        If using gravy, heat it according to package instructions. If making homemade gravy, prepare according to your favorite recipe while the sausages and potatoes finish cooking.

          To serve, spoon a generous portion of mashed potatoes onto each plate. Place two sausages on top and drizzle gravy over the sausages (if using).

            Garnish with chopped green onions for a pop of color and flavor.
