Easy Baked Macaroni and Cheese

2 cups elbow macaroni

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    Cook the elbow macaroni in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.

      In the same pot, melt the butter over medium heat. Once melted, whisk in the flour to create a roux, cooking for about 1 minute until it’s slightly golden.

        Gradually pour in the milk while whisking continuously to avoid lumps. Continue to cook until the mixture thickens slightly, about 3-5 minutes.

          Reduce the heat to low and stir in the garlic powder, onion powder, smoked paprika, and half of the cheddar and mozzarella cheese. Stir until the cheese is melted and the sauce is smooth.

            Add the drained macaroni to the cheese sauce and stir to combine. Season with salt and pepper to taste.

              Transfer the macaroni and cheese mixture to a greased 9x13-inch baking dish. If using, sprinkle the remaining cheddar, mozzarella, and breadcrumbs evenly over the top.

                Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

                  Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley for a pop of color.
