6 pork sausages (your choice: plain, herbed, or spicy)

2 lbs Yukon Gold potatoes, peeled and cubed

1/2 cup whole milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, thinly sliced

1 cup beef broth

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook for about 12-15 minutes, turning occasionally until they are browned and cooked through. Remove from skillet and set aside.

    Prepare the Mashed Potatoes: While the sausages are cooking, add the cubed potatoes to a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes or until tender when pierced with a fork. Drain the potatoes and return them to the pot.

      Mash the Potatoes: Add the butter and whole milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

        Make the Onion Gravy: In the same skillet used for sausages, add the sliced onions. Sauté for about 5 minutes until softened and slightly caramelized.

          Deglaze and Flavor the Gravy: Pour in the beef broth and Worcestershire sauce, stirring to lift any browned bits from the pan. Simmer the gravy for about 5 minutes until it slightly thickens. Adjust seasoning with salt and pepper.

            Serve: Plate a generous scoop of mashed potatoes, top with sausages, and ladle the onion gravy over the top. Garnish with freshly chopped parsley.
