2 cups cooked sushi rice (or short-grain rice)

1/2 teaspoon salt

1 tablespoon sesame oil

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/2 cup breadcrumbs (Panko preferred for extra crunch)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions
 

In a large bowl, combine the cooked sushi rice with salt, sesame oil, Parmesan cheese, and chopped green onions. Mix thoroughly until all ingredients are well incorporated.

    With wet hands (to prevent sticking), form the rice mixture into small balls or patties, about 1 inch in diameter.

      In a separate bowl, mix the breadcrumbs, garlic powder, and onion powder together.

        Roll each rice ball in the breadcrumb mixture, coating them evenly. Press gently to ensure the breadcrumbs stick well.

          In a deep frying pan or pot, heat about 1 inch of vegetable oil over medium heat until it reaches 350°F (175°C).

            Fry the rice balls in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown and crispy.

              Once fried, transfer the rice balls to a paper towel-lined plate to absorb excess oil.

                Serve warm, optionally with a soy sauce or spicy mayo dip.
