6 large eggs

1 cup diced ham

1 cup shredded cheddar cheese

1/2 cup milk

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 tablespoon olive oil

4 large flour tortillas

Fresh parsley for garnish (optional)

Instructions
 

In a mixing bowl, whisk together the eggs, milk, black pepper, and garlic powder until fully combined.

    Heat the olive oil in a large skillet over medium heat. Pour in the egg mixture and cook, gently stirring, until the eggs are scrambled and just set, about 4-5 minutes.

      Remove the skillet from the heat and stir in the diced ham and shredded cheddar cheese until the cheese is melted and well-distributed.

        Lay a tortilla flat on a clean surface. Spoon approximately 1/4 of the egg, ham, and cheese mixture onto the center of the tortilla.

          Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to enclose the filling.

            If desired, you can place the roll-up seam side down in a skillet on medium heat for 1-2 minutes to crisp up the outside. Repeat with the remaining tortillas and filling.

              Slice each roll-up in half, and serve warm, garnished with fresh parsley if desired.
