1 lb ground beef

1 cup uncooked long-grain white rice

1 onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup beef broth

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley or cilantro for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.

      Add the diced onion to the skillet and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute.

        Stir in the uncooked rice, diced tomatoes (with juice), black beans, corn, beef broth, chili powder, cumin, salt, and pepper. Combine all ingredients thoroughly.

          Transfer the beef and rice mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

              Remove the foil, sprinkle the shredded cheddar cheese on top, and return to the oven. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.

                Once done, remove from the oven and let it sit for a few minutes before serving. Garnish with fresh parsley or cilantro if desired.
