6 large flour tortillas

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, finely chopped

1/2 cup whipped cream or cool whip

1/4 cup graham cracker crumbs

Fresh mint leaves for garnish

Instructions
 

In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Gently fold in the finely chopped strawberries and whipped cream. Ensure everything is well mixed without deflating the whipped cream.

      Lay a flour tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture evenly over the tortilla, leaving a little space at the edges.

        Sprinkle a tablespoon of graham cracker crumbs over the cream cheese layer on the tortilla.

          Carefully roll the tortilla tightly from one end to the other to create a log shape. Repeat this process with the remaining tortillas and filling mixture.

            Once all tortillas are rolled, wrap them individually in plastic wrap and refrigerate for at least 2 hours or until set.

              After chilling, remove the rolls from the refrigerator. Using a sharp knife, slice each roll into 1-inch pieces.
