2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon lemon juice

2 cups vanilla ice cream

1 cup sparkling water or lemon-lime soda

Fresh mint leaves for garnish

In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss well to coat the strawberries completely and let them macerate for about 10-15 minutes until they release their juices.
