2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar (plus 1 tablespoon for a sprinkle)

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/3 cup unsalted butter, cold and cubed

1 cup heavy cream (plus additional for serving)

1 teaspoon vanilla extract

Whipped cream for topping (store-bought or homemade)

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with 1/4 cup granulated sugar. Gently toss them together and let them sit for about 30 minutes to macerate, which will draw out their juices and create a delicious syrup.

    Make the Shortcake Biscuits: Preheat your oven to 425°F (220°C). In a large mixing bowl, combine the flour, baking powder, salt, and the remaining tablespoon of sugar.

      Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Add Cream and Vanilla: Pour in the heavy cream and vanilla extract. Stir gently with a spatula until just combined; do not overmix.

          Shape the Biscuits: Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle. Cut out shortcakes using a round cutter (about 3 inches in diameter). You should get about 6 biscuits.

            Bake: Place the shortcakes on a lined baking sheet and bake in the preheated oven for 12-15 minutes, or until they are lightly golden on top.

              Cool and Assemble: Remove the shortcakes from the oven and let them cool on a wire rack. Once cooled, carefully slice each biscuit in half horizontally.

                Assemble the Shortcakes: On the bottom half of each shortcake, spoon a generous amount of the macerated strawberries along with some of the syrup. Top with a dollop of whipped cream and then place the top half of the biscuit on. Add more whipped cream and a few more strawberries on top if desired.
