2 medium eggplants, sliced into 1/4-inch rounds

1 teaspoon salt (for drawing moisture)

3 cups marinara sauce (homemade or store-bought)

1 cup all-purpose flour

3 large eggs, beaten

2 cups breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

3 cups shredded mozzarella cheese

1 teaspoon dried oregano

1 teaspoon dried basil

Fresh basil leaves, for garnish (optional)

Prepare the Eggplant: Lay out the eggplant slices on paper towels and sprinkle with salt. Let them sit for about 30 minutes to draw out excess moisture and bitterness. Rinse with cold water and pat dry with paper towels.

    Bread the Eggplant: Set up a breading station with three separate shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with dried oregano and basil. Dip each eggplant slice first in flour, then in the egg, and finally coat with breadcrumbs.

      Fry the Eggplant: Heat a generous amount of olive oil in a large skillet over medium heat. Fry the breaded eggplant slices in batches until golden brown on each side, about 3-4 minutes per side. Drain on paper towels.

        Prep the Baking Dish: Preheat your oven to 375°F (190°C). In a large baking dish, spread about 1 cup of marinara sauce on the bottom.

          Layer the Ingredients: Place a layer of fried eggplant on top of the marinara. Spoon more marinara over the eggplant, then sprinkle with Parmesan and mozzarella cheese. Repeat the layering process until all ingredients are used, finishing with a layer of marinara and a generous topping of mozzarella cheese.
