1 medium eggplant, sliced into 1/2-inch rounds

1 cup breadcrumbs (preferably Italian-style)

1/2 cup grated Parmesan cheese

1 cup marinara sauce

1 cup shredded mozzarella cheese

2 eggs, beaten

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil spray

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper. Mix well to ensure an even distribution of flavors.

      Dip each eggplant slice into the beaten eggs, allowing any excess to drip off. Then dredge it in the breadcrumb mixture, pressing gently to ensure an even coating. Place the coated slices on the prepared baking sheet.

        Lightly spray the tops of the eggplant slices with olive oil for a crispier texture. Bake in the preheated oven for about 20 minutes, flipping halfway through, until they are golden brown and crispy.

          Remove the eggplant slices from the oven and switch the oven to broil.

            While the oven is warming up, spread a spoonful of marinara sauce on each eggplant slice, followed by a generous sprinkle of shredded mozzarella cheese.

              Return the tray to the oven and broil for 2-3 minutes, or until the cheese is bubbling and golden brown. Keep a close eye to prevent burning.

                Once done, remove the bites from the oven and let them cool for a minute. Garnish with fresh basil leaves before serving.
