Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
Beat in eggs one at a time, followed by the vanilla extract. Mix until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and espresso powder.
Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Be careful not to overmix.
Fold in the chocolate chips and chopped walnuts (if using) until evenly distributed through the dough.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Sprinkle a tiny pinch of flaky sea salt over each cookie dough ball for an added flavor contrast.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are just set.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
