1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 large onion, sliced

1 medium zucchini, sliced into half-moons

1 teaspoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Instructions
 

Heat olive oil in a large skillet over medium-high heat.

    Add the sliced onion and bell peppers to the skillet. Sauté for about 5 minutes, stirring occasionally, until the vegetables begin to soften.

      Incorporate the zucchini and continue cooking for another 5 minutes or until all vegetables are tender and slightly caramelized.

        Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the veggies. Stir well to ensure all the spices evenly coat the vegetables. Cook for an additional 2 minutes for the flavors to meld.

          Squeeze the lime juice over the cooked veggies and toss to combine. Remove from heat.

            Transfer the sautéed fajita veggies to a serving platter and garnish with fresh cilantro.
