Instructions
In a large pot, heat sesame oil over medium heat.
Add sliced garlic and sauté for about 2-3 minutes until fragrant and slightly golden.
Stir in the minced ginger and chili paste; cook for another minute to combine flavors.
Pour in the vegetable broth and bring to a gentle boil.
Add the julienned carrots and cook for 3-4 minutes until they soften a bit.
Add the ramen noodles to the pot and cook according to package instructions, usually around 3-4 minutes.
Once the noodles are cooked, stir in the baby spinach and soy sauce, cooking for an additional minute until the spinach wilts.
Taste and adjust seasoning with salt if necessary; for extra heat, sprinkle in red pepper flakes as desired.
Serve hot and garnish with chopped green onions and a boiled egg, if using.
