1 pound breakfast sausage, crumbled

6 large eggs

2 cups whole milk

1 teaspoon salt

1 teaspoon garlic powder

8 cups cubed stale French bread

2 cups shredded cheddar cheese

1/4 cup butter

1/4 cup all-purpose flour

2 cups milk

1 teaspoon sage

Prep the Sausage: In a large skillet over medium heat, cook the crumbled breakfast sausage until browned and fully cooked. Remove from heat and set aside, leaving a little grease in the pan.

    Prepare the Vegetable Mixture: In the same skillet, add olive oil and sauté the diced bell peppers and onions until softened, about 3-5 minutes. Combine them with the cooked sausage in a large mixing bowl.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs, whole milk, salt, pepper, garlic powder, and onion powder until well combined.

        Assemble the Casserole: In a greased 9x13-inch baking dish, layer half of the cubed French bread. Top evenly with the sausage and vegetable mixture, followed by half of the shredded cheddar cheese. Add the remaining bread on top, then pour the egg mixture over everything, making sure to cover all the bread. Finally, sprinkle the rest of the cheddar cheese on top.
