Ingredients

1 lb ground beef

1 lb ground pork

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

1 cup French onion soup (canned or homemade)

Fresh thyme leaves for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a skillet over medium heat, add a little oil and sauté the chopped onion until soft and golden brown, about 8-10 minutes. Add the minced garlic during the last minute of sautéing. Remove from heat and let cool slightly.

In a large mixing bowl, combine the ground beef, ground pork, sautéed onion and garlic, breadcrumbs, Parmesan cheese, eggs, Worcestershire sauce, salt, black pepper, and Dijon mustard. Mix well until all ingredients are evenly incorporated.

Transfer the meat mixture into a loaf pan, shaping it evenly. Pour the French onion soup over the top, allowing it to seep into the meatloaf.

Bake in the preheated oven for 1 hour, or until cooked through and the internal temperature reaches 160°F (70°C).

Once done, let the meatloaf rest for 10 minutes before slicing. This helps the juices settle.

Serve slices warm, drizzled with any remaining soup from the pan. Garnish with fresh thyme leaves if desired.
