1 pound flank steak, thinly sliced

1 large onion, finely chopped

2 tablespoons olive oil

2 tablespoons butter

3 cloves garlic, minced

1 teaspoon thyme (fresh or dried)

1 teaspoon sugar

1 cup shredded Gruyère cheese

Salt and pepper to taste

1 tablespoon balsamic vinegar

Toothpicks or kitchen twine for rolling

Prepare the Onion Mixture: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onions, salt, pepper, and sugar. Cook for about 20 minutes, stirring occasionally, until the onions are caramelized and golden brown. Add the minced garlic and thyme, cooking for an additional 2 minutes. Remove from heat and stir in the balsamic vinegar. Allow to cool slightly.

    Prepare the Steak: Lay the flank steak slices out on a clean surface. Season both sides generously with salt and pepper.

      Assemble the Pinwheels: Spread a thin layer of the caramelized onion mixture evenly over each slice of steak. Sprinkle the shredded Gruyère cheese on top of the onions.

        Roll the Steak: Starting from one end, carefully roll each steak slice tightly into a pinwheel shape. Secure with toothpicks or kitchen twine to keep them intact.

          Searing the Pinwheels: In the same skillet used for the onions, add a bit more olive oil if needed and heat over medium-high heat. Sear each pinwheel for about 3-4 minutes on each side until browned and cooked to your desired doneness.
