Ingredients

4 slices of thick brioche or challah bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper to taste

1 tablespoon honey

2 tablespoons butter

Fresh arugula (for garnish)

Maple syrup (for serving)

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, paprika, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the French Toast Mixture: In another bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

Cook the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in flour, shaking off any excess. In a skillet over medium heat, melt 1 tablespoon of butter. Add the chicken and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and let rest.

Make the French Toast: In the same skillet, add more butter if necessary. Dip each slice of brioche into the egg mixture, soaking each side well. Cook each slice on the skillet for about 3-4 minutes per side, or until golden and crispy.

Assemble the Sandwich: On one slice of French toast, layer a piece of chicken, a drizzle of honey, and a handful of fresh arugula. Top with another slice of French toast, pressing gently to secure.

Serve: Serve the French toast chicken sandwich warm, with a side of maple syrup for dipping.

              Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: 2

                - Presentation Tips: Cut the sandwich diagonally and stack on a plate with a small cup of maple syrup for dipping. Garnish with arugula and a drizzle of honey on top for an extra touch.
