4 large russet potatoes, peeled and diced

8 oz smoked Polish sausage, sliced into rounds

1 medium onion, chopped

2 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Rinse the diced potatoes under cold water to remove excess starch. Soak them in a bowl of water for about 20 minutes, then drain and pat dry with paper towels.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced Polish sausage and cook until they are browned and slightly crispy, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté Onions and Garlic: In the same skillet, add the remaining olive oil. Add the chopped onion and minced garlic, sautéing for 3-4 minutes or until the onion is translucent and fragrant.

        Fry the Potatoes: Increase the heat to medium-high, then add the drained and dried diced potatoes to the skillet. Sprinkle with salt, smoked paprika, and black pepper. Stir to coat the potatoes in the seasonings.
