Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking pan with parchment paper and non-stick spray. In a large mixing bowl, combine the Funfetti cake mix, softened butter, milk, and vanilla extract. Mix until smooth.
Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
Once the cake is cool, crumble it into a large bowl until it resembles fine crumbs.
Add the softened cream cheese to the cake crumbs. Mix with your hands or a spatula until thoroughly combined. Fold in 1/4 cup of sprinkles.
Roll the mixture into 1-inch balls and place them on a parchment-lined tray. You should get around 20-25 truffles. Refrigerate for at least an hour until firm.
In a microwave-safe bowl, melt the white chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between until smooth.
Remove the chilled truffles from the refrigerator. Dip each truffle into the melted chocolate, allowing excess to drip off before returning them to the parchment-lined tray. Sprinkle with extra sprinkles while the chocolate is still wet.
Allow the coated truffles to cool and set in the refrigerator for an additional 30 minutes.
